Strawberry Galette
Strawberry Galette with Basil Cream
3/4 C heavy cream
1/3 C loosely packed fresh basil, chopped
2 Tbs sugar
3/4 C mascarpone cheese
2 1/2 C AP flour, plus more for surface, sifted
1 1/8 tsp salt
1 tsp sugar
1 C (2 sticks) cold unsalted butter, cut into small pieces
1/3 C plus 2 tsp ice water
1 lb strawberries, hulled
1/4 C plus 1 Tbs sugar
2 tsp cornstarch
1 egg yolk
1 Tbs water
1 Tbs cold unsalted butter, cut into small pieces
